on a charter recently and small circle hooks were excellent - tenderised squid for the bait.
3/4 shank baitholder hooks do the trick normally
size depends on how big they will be. start small and work your way up

Looking at a family fishing trip for a few days in December/January. Not sure how harsh we should be but it was clearly a stupid thing to do and it highlights the dangers on the water.
