All gopros can shoot in 720p.

If you want the cheapest then the gopro hero + LCD is the one to get. It can shoot in 720 and also 1080 that is plenty for you.
Drawback is the battery is sealed so once its run out you cannot swap another battery and keep recording.
Battery life is about 1.8 hours max.

Get the accessories like head strap. Chest strap. Various mounts and things like that from Ebay
