The price of eskies varies enormously, with the more expensive models worth a couple of hundred dollars or more depending on the thickness of the insulation.
So how can you improve the efficiency of your current Esky?
Some of the cheaper models do not even insulate the lid.
On the cheaper models with insulation in the lid, you can drill an hole and inject some expander foam.
Another simple solution is to have two eskies in one, this can be achieved by using a insulated cooler bag inside your esky.
The added bonus is that you can then keep your food and bait separate from each other.

I generally put used milk bottles filled with water in my freezer and they last much longer than the ice from servo's
Using the above method, my bait stays frozen for about 2 days, so if I don't use it, I return it to the freezer.

Re: keeping cool
I got one of these for the kayak:

Works pretty well but is a right pain in the arse to clean the fishy smell out of. You also have to watch out because if the blocks of ice shift too much it can make the yak list to one side a bit. Saves a heap of space on the yak though and is easier to access than an esky in the back so I'd defintely recommend it until a more practical solution appears.
I don't recommend taking it hiking to some remote rock ledge to keep bait cool...
