So i have a elite 7 hdi on the boat but was thinking the 7 inch hook 7 chirp on the boat?

Which is better?

And if i put the chirp on as.second unit which do i use as sounder and which as maps?

Also thats the best placement for new unit?

Right next to each other and use the Hook for sounding as it has the chirp function.

Get rid of the compass, have the units side by side and use the chirp as a sounder, should be a much clearer sounding with chirp, you can experiment having them both sounding at the same time and see which you prefer

yep ditch the compass or relocate it somewhere else and put both units where the compass is right next to each other side by side, so you can see them both while driving etc.
you will have interference if you run both sounders together unless you use different frequencies at the same time.
id defenitely use the chirp as the sounder and other as Gps unit

Also can someone tell me what the plastic thing is to the left?
Maybe temp guage?

The plastic thing is a sensor for your speedo, so it measures your speed.
