Stick to chasing bream son...

Are you actually anchored when your chasing them? And can you see them in your burley trail?
I've been anchored and I've been drifting. It didn't seem to make any difference last week. I didn't see any in the trail, I could see a lot of pinkies and tommies cruising around through it so it was definitely attracting fish.
I find generally if they are not in your burley trail then they are just not there.
Generally within 20 mins max they will be in your burley trail if they are around the area, so If you don't see them after a while then move to a different spot

Wading around the IH Ramp and wading in the St Leo Harbour-Adjacent to the Pier
Does it need to be super calm like when floundering or not?

I'm really keen on getting stuck into a few of these babies as I absolutely love to eat them, not only this but they are around $35 a kilo at the market.

What's the best burley?
What time of year is best to target gar's?
What depths are they generally in and also what 'terrain'?

Yes Needs to be calm with the net
I find it better to be choppy when using a rod and reel

I use a couple of nibble tip rods with these floats attached, no need to burley constantly just fill them with burley nuggets and send them out, if there's Gars about they will follow the slowly dissolving nugget trail back to your rig...

Yep they work but a waggler style float will outfish them every day of the week i can see every thing .I will try to explain if they hit the bait heading up to the surface float lise flat if they hit going down float disappear,s under the surface on the weekend they were just pulling the float sideway,s which you can,t see properly with that type of float hope that help,s
