Fishing Report & smoking tailer.

Post by ango » Thu Jun 15, 2017 9:33 pm

Hi All,
I went out from Paynesville yesterday, it was very cold and foggy, but still some fish were around, it was a bit slow on the flathead, I only got one, I never kept a count but it must have taken 200+ casts fishing with SP's. Also plenty of tailer around as by-catch, so I kept a few for experimentation with the smoker. I googled up recipes for smoking fish, some used salt, some sugar to cure the fish, some recommended a brine, others the dry powders, so I took an each was bet and came up with the following recipe:

Gut & gill the Tailer, do not scale, for 2 x 30 cm Tailer use:
4 Table spoons cooking salt + 1 Table spoon raw sugar, mix well & rub into fish. Allow to stand for 1 hour, then rinse off under tap & pat dry with paper towel.
Place fish into smoker at sides, not directly over heat, use 2 table spoons of wood chip that has been soaked in water for 1 hour. (in snap lock bag)
Add 100 ml metho to burner, this should be enough for 20 mins. Check with skewer to see if cooked.

I used ironbark for the smoke & they turned out very tasty indeed.

Cheers
Ango.

Tailor aren't bad eating. Not whiting, not by a long shot, but not bad either. They're better if you bleed them, and discard the bloodline. Apparently they aren't good if you freeze them -- I've never had a problem, but some people have

Where did you end up scoring the flatty? Just got back from 5 weeks away at work, keen to score a flatty on SPs!
