Who knows, maybe the smell.
There was a post about this I think. Could be coz it looks like an egg, or the yabbies/prawns go for it then boom the cod eats them along with the cheese.
Same question of why they eat golf ball?

Because fish are odd same as bream go for bread and chicken breast but yet i tempt them with big fresh prawns and nothing will bite.

i think its because shrimp are attracted to id and he cod see a ball of shrimp rather then the cheese.

They will likely eat a golf ball cos it looks like an egg. As for the yabbies or shrimp going for it...there are not many shrimp around in winter to gather around the hook yet the cheese still works.
No doubt the smell attracts the cod. I haven't used cheese that much but from what I have seen the main catch on it is cod. It doesn't seem to attract that many other species frequently. Although from what I hear, silvers seem to like it!!!!!!!!

Be interesting to set underwater camera in clear water to see cod/silver/yellow/prawns around the cheese.
