That's a ripper cala. I actually don't mind the taste of salmon either if bled immediately.

A few weeks ago I had enough salmon to feed the missus and I for a week.... dinner menu that week was something like...

1) Fillet & skinned - Panko Crumbed and Fried in butter and olive oil
2) Chunked - Thai Green Curry
3) Filleted and blended - Crumbed Fish Patties
4) Whole - Baked in Salt Crust

Not the most perfect eating fish, but you can make a variety of dishes. Watch the pommy chef Rick Stien on TV for ideas as he usually specializes in Seafood.

RedHunter is correct about the bleeding after capture . My catches I will dispatch immediately and return to the water in a catch bag to bleed out into the water, and imho its makes the eating 200% better than just throwing them in the esky.
