With gars. I use small chunks whole on a hook. No filleting cut a piece iff and on the hook.
I use a longshank and usw some baitmate on the shank so the buggers cant get them off easily

Actually, I gave it some thought. The places I target pinkies is in the shallows usually around an hour or so each side of low tide in rock beds or close to some reef/rock beds. I don't think any bigger ones would come in so shallow. Maybe I should start fishing deeper areas.

If you know that for a fact then uae smaller baits.
But the only way to get the biggest or if the smaller ones is to use baits big enough to last while the little buggers smash it. Most cases the bigger fish have no time to get to the baits cause the hundreds of smaller ones smashing it.
Maybe use 2 rods one big and one small bait. Use a circle hook on the rod you want to leave unattended.
