You don't know what you are missing couta is a great eating fish, as for trevali the parasite only attaches to its tongue as a cooked fish I dont think its that good but as sushi it great

Not a fan of couta, way to bony for me. & to be honest i couldn't care less if the worms cook off, knowing and seeing those things - i aint eating that meat.. & i aint eating Rabbit with Mixo as well.. Why would i? At the end of the day its a sick animal thats dieing from a disease, surely there's better choices. Don't like cleaning leatheries and when i do i find the usual sizes don't have enough meat to justify taking them, thats just me anyway..
I'll stick my squid, flathead, whiting, pan sized snapper, gummy fillets, fresh salmon (bled) fillets, etc..

Eating a sick rabbit not for me but that wasn't how I read the intent of the original post.

AZ, leather jackets clean easily cut the head off just behind the spike on a 45 deg angle all the way through to the poo hole.

Remove remaining guts and pull the skin off.

Cook them whole and eat the flesh straight off the bones.

Thanks frozen, i'm actually going to attempt it next time, seen a few decent sized ones out from Queenscliff..
