I just followed this recipe loosely.

I just used cream and stock rather than milk, but it turned out pretty nice.

I discover that Australian Salmon ( who has been bleed ) filleted than cured in a mixture of Salt, some sugar and fine cracked pepper for 3 hours , then cold smoked for about 2 or 3 hours are simply sublime :a_goodjob:

Does any one know how to preserve Tuna? Something to do with a jar and oil?
Of course I talk to my self while fishing.. sometimes I need expert advice! :fishing:

My old Italian neighbour used to make it, and with Kingfish to. The fish was poached on low heat for a few hours with some salt then dried on tea towels and put into sterilised jars with olive oil and a clove of garlic, chilli etc. Very tasty!

Been a while, the fish are biting again! Snapper fillet, with japanese inspired potatoes and roquette, fennel and orange salad
