Scraglor, that looks amazing.

I guess this doesn't count as I bought it rather than caught it, but kingfish ... over the weekend I steamed a small one whole. I made a paste with some bird's eye chillies, coriander, garlic, and enough fish sauce to moisten.

I didn't take any photos, no. I thought the preparation worked well.

On Saturday I caught a decent-sized brown trout, and cooked it simply. I was in an AirBnB, so I didn't have access to my usual collection of shite. I seasoned some flour with Old Bay, and dusted the skin with it. It was then pan-fried in what the French would consider to be a 'dab' of butter (which is, to say, enough butter to make your cardiologist need to sit down). I thought it was very good for a simple preparation.

It’s nothing like scraglors amazing stuff. But currently on holidays up through central/northern Queensland. I bet the big 4 electric frypan hasn’t seen a meal as tasty as this seafood paella I threw together for the misso’s 30th birthday dinner.

Coral trout. King prawns. Calamari and mussels made up the seafood part. Was bloody awesome.
