What sort of potatoes do you use for deep frying? I know some aren't good for frying because they go brown very quickly and soggy.

Another trick with the batter is to use almost frozen water and keep the batter mix very cold. The cold temp makes the batter frizzle more and is more crunchy.

i used the washed ones with the purple skin .. never had a problem with em lol
PLENTY!! of FISH!! in the SEA!! but so little TIME!!!
