Marinate it in fresh Kiwi fruit juice/pulp overnight in the fridge, makes it really tender. Milk works ok to.

For squid I find the smaller models are great stuffed then fried (real small <12cm hoods). for anything a bit larger I usually score them in a similar manner to fish vic and lightly coat them in semolina

Over cooking is THE biggest reason squid is tough.
It only needs to be cooked for 30 seconds or so, def no longer than 1 minute.

Unless you are slow cooking it or roasting it, then the longer the better apparently.

We generally only do it in batter(rings) or salt and pepper squid and have never had it tough yet.

Agree. 30 secs max, or like 30 mins if you are stuffing it, and then browning off and slow cooking.

Also, on bigger squid the kiwi fruit trick works great. I got some 35cm ish hood squid the other day, a couple of hours in kiwi fruit and they were tender as. just make sure you clean the juice off haha.

I've been meaning to try this in the past but I always end up going salt n pepper by default. Must try next time!
