Thanks mate :) was my first time trying this way of cooking it and it turned out being delicious :thumbsup: with just a bit of lemon juice on top :) helps having really fresh fillets though :-D

So I used my smoker for the first time today on a piece of Atlantic salmon and a flounder I got last night.
All I can say is it was absolutely beautiful! I never expected it to taste so good! :thumbsup:

I tried smoking the salmon I caught at Portland but still didn't like the taste. Brined them for two days in salt, brown sugar and a bunch of other stuff too and the salmon taste still shone through lol
The rest of the fillets are going to be bait this week I reckon.

Question is what kind of sawdust did you use mate? I saw many different kinds but got the hickory one. Smooth gentle flavour :)

I did something similar with pinkies before christmas and they were great so I'm just going to assume that salmon tastes like ****
