At least you use most of the fish unlike most. Couple of years ago when I went on a tuna charter out from Portland was surprised at the cleaning table how only the fillets were knocked off. Behind the head there was so much flesh. But locals were there waiting for the left overs.seephil wrote:Yes in deed you are correct Lightning. Everything taste better when cooked on the bone. I hardly fillet fish except the odd flatty tail here and there. So after fishing, when it comes to cleaning time, a quick scaling and gutted, done! I sometimes feel saddened when i see snapper frames with massive heads thrown into the water after people have filleted their catches.
