Sorry if this is a repost, but check out this website and vid about humanely seeing off your catch.

When I catch something worthy of the pan, I will be executing it with Iki Jime :(

I only ikijime catches now.
Brainspike, put it behind the brain by 0.5cm and push towards ensuring you hit the brain, as you are intending to hit the back of it to kill it anyhow. Doing this I haven't had a fish need two spikes, ever.
Gut.
Ice slurry
fish keeps better than snapping their back or clobbering their head, cave-man style.

for it, I use a stanley (very important!-I joke.) size 0 phillips head, 50mm screw-driver, and for bigger fish, I use a size 1 phillips in a 100mm, grinded to a point!
pick them up for $1.50 at bunnings ;D
