Miss Shimano KGW are probably one of the best eating fish you can get in Vic my preference is to either grill with just a little lemon or pan fry in coconut oil. Preferably I try to limit the amount of catches I crumb or batter due to health reasons.

Ensuring all the bones have been disposed.

Dusted lighty with flour, covered in whisked egg and coated in PANKO breadcrumbs.

Fried in a shallow pan making sure the oil is hot, 1 min max on each side.

Topped with salt, pepper and squeeze of lemon. All time best eating fish.

Lightly floured and shallow fried is my favourite. Couple of minutes both sides.. perfect.
