"Baby" flake fillets

Mate gave me some
That's what it was called at the fish mongers
He said It was a bit oily, when he cooked it
I know we have some damn good cooks on here
What might be the best way to cook it ????

I spoke to that fish monger a couple of days ago, I asked him about the carp he sold, sells heaps, but it's farmed carp. Carp is still farmed in Australia

Start with a roaring fire, place whole carp in fire.
When fire has cooled, put the ashes on your garden

Mate said the flake was a bit oily, so I'm after tips to avoid the oilyness

Place fillets on a cake tray in the fridge overnight to drain. It's likely whatever he's brought was some type of small whaler and not a gummy/school shark

The last fish shop I saw selling it was in Greensborough, I questioned what it was and they were selling 7 gill as "Baby Flake"

I thought it had changed and this wasn't allowed anymore after all the hoo haa of not getting what you thought you were paying for. I was promptly told it was fine and to rack off :oops:

As far as I'm aware flesh from the shark family is generally not oily, if anything it dries out quickly if over cooked... I've never heard of "Baby" flake fillets, if it's legal size shark it's not baby, if it is baby it's not legal size, I think you have a shady monger there ! If he's selling bags of magic beans I'd stay clear of them ! ...

doubt it was gummy fillets.
Have had it many times and never been oily...

All shark is classified as flake so it's not like selling something else a flathead and by technicality fine to do.

You could be buying gummy or school sharks from tassie, gillers or bronzies or other whalers, hell even draughtboards can be sold as flake in a shop without an eyelid being blinked
