Hay guys & gals thought i put up a thread on how to gut/clean a Squid & Then cook a Simple easy Dish!!
What you will need:-
Desired amount of Squid
Bread crumbs
Eggs
Salt & pepper
Mix herbs ( optional )
veggie oil (1-2 cups) & pan
Lemon.
Method:-
So firstly youll need to Gut/Clean the Squid So give it a wash under the water to get dirt/ink off
Then with a nice Big kitchen Knife Scrape at the Squid as it has a layer of skin on it, You`ll find that the skin slowly starts to peel away from it, Keep doing that until you rotate to the Wings of the Squid and it should come off real easy (peel it off)
After you`ve done that its a matter of getting that back bone thats in the body at the back of the Head without Breaking the Ink Sack (If you do break the Ink Sack it doesnt matter just means you gotta clean it again)
So grab the Head and you`ll feel that Back bone and slowly pull it out, Once you got her out Give it a Rinse and Shes ready to go!
Cooking:-
So once youve got your Squid in just a white tube Cut them in fairly nice sized rings Or you can cut them into Cubes (and put criss cross slices into them)
Now you put Bread crumbs into a Bowl or Plastic bag along with the salt&pepper.
Crack a egg or two into a bowl mix the calamari rings in with the egg then place them into the Bread crumb bowl or plastic bag, Give it a nice toss around so covering the Entire Calamari ring.
Get your veggie oil into a nice deep pan , place your Calamari rings into the pan, Couple seconds a side (5-10) Dont cook for too long cause they`ll turn into rubber band like texture.
Once thats done you serve with Lemon and abit of Salad or maybe some chips if you like! :tongue:
Asian Style Calamari Rings:-
As i noted up top you can cut them into cubes and make criss cross sections into them, With that its the same method or you can put it into batter. then deep fry it until Light golden brown.
For alittle more Zest to the Dish get:-
Diced half a Onion
Diced fresh chilli
Diced capsicum (red)
Diced capsicum (Green)
( make them into little cubes peices no bigger than the size of your pinkie nail)
Grab another pan with alittle bit of Oil wait till oil is heated up put in onions first and wait till onions are light golden brown then throw in the chilli & capsicums, give that a good toss in the pan for bout 5-10seconds on high heat.
Once your done throw it ontop of the calamari cubes & your done!! :lol:

I throw the squid in the sand and it makes it so much easier to clean
