Hi guys havnt put up a recipe in along time :D and just so happens ive caught heaps of fresh pipis lately so thought id share!!

First Style of cooking them is "PIPI`S WITH XO SAUCE"
Its not very hard quiet simple :clap:

So.. what you will need:-

XO sauce - This can be purchased at asian groceries and there`ll be different types "XO Sauce scallop version" Or "XO sauce Bacon version" just depends on your taste :)

Corn starch ( Mix corn starch in separate bowl with water, Mix until the water is murky white and not too thick )

Water ( Cup or depends how much pipis youll be cooking )

Garlic ( Diced )

Oil

METHOD:-

Make sure you wash the fresh pipis properly as they will be still holding sand inside them so best to let them soak in water for couple hours
( Trick is to let them sit in sea water so they open up, cause in fresh water they stay shut tight :tongue: )

In a Wok Or Pot heat up some oil and throw in the garlic let simmer for a quick couple seconds.

Once nice and clean you can proceed to throw them into a Wok or if you dont have a wok a deep shallow pot will work.

so throwing them into the oil/garlic toss them around acouple times and let sit for 30 seconds each time

Finally throw about a Cup of water or enough water so that the pipis are lightly covered in water to let simmer. ( let simmer couple minutes each time and toss again )

Once simmering Throw in a Tablespoon or Two of of The XO sauce and mix through and continue to let simmer ( or desired amount ).

"Note;- Make sure you watch the water levels of the Pipis so that they dont dry out"

Once mixed through add corn starch to the pipis Only adding alittle by little to desired thickness!!

And your done!! Serve it up! and if you like you can buy Chinese Donuts from the Asian bakeries and use that to dip into the sauce!

YUM!!



METHOD #2

BBQ pipis with ginger/spring onion sauce


A Very Simple way to cook them up also is to throw the pipis onto the BBQ let them simmer each side till they open serve it up with the sauce.


What you will need

x1 Ginger

x1 Spring Onion

Olive oil

Salt.


How to prepare sauce

You will need a clove of ginger and a stick of spring onions.

Cut the gingers skin and then grate finely into a bowl.

Dice the spring onion finely.

Once all done in a small pan/pot put about half a cup of olive oil on high heat till nearly smoking.

Mix ginger + Spring onions together,.. adding 1 teaspoon of salt to mix.

Once oil is hot enough pour oil over mix and it should simmer in the bowl for couple second ,.. give it once last mix through and your done
( let sauce cool down before serving )

Sounds Nice. Kilpatric them too would be nice ! ... Bit of cream, brown onions, worcestershire sauce and a tad of mustard powder and bacon , all fried up in the pan. yummo ! . Cheers Rick

I shall inform the men in the white coats you loon...KGW are the fish of the gods.....I think John Dory are the only better tasting fish that I`ve tried.

jon - yeah they keep well just make sure you get all sand out and airlock them :D
