Best fish filleting knife?

Hi guys,

I am after recommendations for the best fish filleting knife available?

The knife would have to be able to fillet all species from Gars, flatties, KGW to Mulloway and Snapper.

This is for a Christmas present.

its not about the best knife its how you keep it sharp i use cheap knifes on the boat lost to many overboard and good ones at home they all work well if kept sharp.
if you buy a stone and steel with your knife for this gift there will be plenty of filliting for years to come

A good quality boning knife (swibo,victorinox,f ****)will hold it's edge longer once sharpened properly and they can be obtained at a reasonable price through butcher's suppliers (huon's) is one.
A steel & stone and learning how to use them properly is also very handy.

I believe the Dexter Russell fish filleting knife is used by some fish mongers so it must be a good knife...

dexter russell that is a good knife got several of these if u get a carbon blade make sure to clean it dont leave wet they rust easy but are easier to keep razor sharp than a stainless blade but thats only my opinion .

I've only got cheap ones :( but I have 1 that doesn't get used for anything else except filleting and I never let it get a dull edge. This seems to work ok for me as I generally only use it on shark as I don't eat a lot of other fish.

When I was up north shooting roos, we used to drop our knives off to the local butcher every weekend, he'd put a decent edge on them(we chipped them a few times due to hitting bones and other crap in their fur), then we kept there edge with a steel through the week. From memory is was $20 to do 4 knives, which was pretty good we thought.
