what do you do with your salmon?

I see guys catching kilos of huge salmon in the surf

Are they good eating or do people save them for bait?

What's the best way to keep them for either option? I assume people freeze them, do you gut them first or what?

Any articles or info on this would be good!

I keep them for bait and food. With bait i don't bleed or gut and will vaccum pack and put in the freezer. For food I bleed the salmon and eat fresh within 24 hours.

Gummy bait for me, but have been meaning to try some for eating.

I release probably 95% of them

Occaisionally we'll eat one or i'll keep a couple for baits if i'm fishing without CarlG around.

Catch and Release.
I will keep some for bait if I am staying at the salty south.
I fish fresh water most of the time.
Murray cod my choice of target fish.
Interesting that if one of them is kept all hell breaks loose.

Gummy bait for 1st choice.
If cooking I actually really enjoy them filleted and rolled in a flour and herb mix….cumin, garlic, chilli etc… then pan fried in a little grape seed oil.

……now I'm hungry.
