My problem is I also love catching and eating gummy shark, of which, lots are around currently, so therefore, I need lots of bait

I love salmon. Easy to catch clean and eat. Same as trevally.
Bleed and never freeze. Must be eaten fresh. Straight on the Bbq is my preference

Great eating. Prep as in first post, but keep the fillets in large pieces. Cold smoke for 90 minutes with hickory or alder.
Remove, brush with butter and bake in the oven at 120C for 15min.

Best way to prepar salmon is to whack straight in the freezer for bait because they taste shite
