No snappers here bud, you'll find crocs prefer the warmer water up north...
In reference to baits for snapper, the list is a mile long. Snapper are a scavenger that will eat just about anything...however fresh is always best. Everything in the sea loves fresh squid, including reds. Something full of blood and oil that gives off a bit of scent is also a wise move, such as cubes or fillets of slimies, couta, eel, salmon, fresh pillies, mullet, gars, etc. Best to always mix it up slightly, especially at this time of year as reds are quite finicky in this cold water therefore can be quite picky with what they eat during the small bite windows. Wrasse fillets do work, but there are better baits out there imo. The gars and grassies you're catching will work, but some squid in the mix would be a good idea.
