Nice lunch mate.
I have always loved my gars too. One of my favourites actually.
Reminds me I haven’t had any in ages. Might have to change that!

Gar is nice to eat, similar to KGW on my pallet.

I have a fair few food collection myself from my catches. I was a chef for 6+ years ;-)
Though I gave up hospitality, certainly the experience is use-able.
Here's some of them, let me know if you want the recipe or something.

Grilled chicken stuffed calamari with cucumber sticks and sambal
Steamed/baked snapper with ginger and soy
Maple smoked trout with/without sides
White wine pipi pasta

I didn't think of that , , , , those sneaky couriers :down:

Then, I shall go for the "Dine in" experience.

Can I then make a reservation for two, please. (There is only one of me BUT it looks so good, I plan to have a BIG pigout session :-D )

- fresh calamari hood, cleaned and inside out

Stuffing:
- chicken mince 250g
- 1 teaspoon finely chopped garlic (more if you want)
- 1 tablespoon finely chopped shallots or brown onion (more or less if you want)
- super finely chopped kaffir lime leaves (optional, but I like it)
- 1 tablespoon flour
- salt pepper
Mix them all by hand then stuff it into the calamari hood.

Marinate/basting:
Use food processor to make it into paste/sauce consistency of
Garlic, shallot, coriander seed, salt pepper, lemon juice. Add some raw sugar if you like it sweet. Make as much as you need/want. Put on the stuffed calamari and leave for wt least 30 mins.

You can cook whole as long as you flatten it (so it'll cook the chicken), or into rings like I did and cook chicken side (quicker to cook). The skewering is unnecessary btw
Cook on flat grill or grill pan and keep basting.
