How big of a snapper we talking mate? My friend and I have discussed this many times if we get a really big one

It's free if you just hang it up to dry for a few weeks

You'd have more luck actually going to a taxidermy service and asking them for a quote based on rough estimates in size and weight. Bear in mind that fish are very hard to taxidermy because their colour fades and they dry out.
