Use the water from the bay. Salt water is slower to thaw than fresh
Or just throw a few spoons of table salt in the bottle as you're filling it. It'll dissolve readily enough.

Salt actually lowers the freezing point while reducing the time it takes to thaw out, so it makes your esky colder but for a shorter period.

100g of salt in a liter of water will lower the freezing point to roughly -6C.

Yeah I was just thinking about filling up with sea water just today. Maybe adding salt might be easier.
