Very nice :thumbsup:Seb85 wrote: ↑Sat Aug 24, 2019 7:59 pmI still keep my super sharp filleting knife from the chef-ing days, it certainly helps :thumbsup:smile0784 wrote: ↑Sat Aug 24, 2019 7:57 pmX2Lightningx wrote: ↑Sat Aug 24, 2019 7:55 pmMate looks like you did a great job filleting those sambos!
Can’t wait to see the end product
Usually, oily and 'fishy' fish are good to be smoked. Has anyone tried smoking aussie salmon?

I used to have a chicken pet, I named it dinner.
I shall try smoking the next time I got a salmon or two.

Re: Port Melbourne : a flock and a school
Just with the smoking I remember trying a few different flavours first before I found the one I liked the best.
Haven’t smoked any for awhile so forgot the name of it and I’m not at home right now to go and see what it is.
But you might want to try a few to see which one you like best mate

Re: Port Melbourne : a flock and a school
Turned into 'fish in light curry'.
Since salmon is 'oily & fishy' fish, it's perfect for curry. Unfortunately I didn't have coriander leaves.
Made a light curry so not too thick and not overpowered by the coconut cream. The stock/broth is delicious, there's no need for thick coconut cream. The meat is flake-y and delicious! Still has fish smell but no disgusting fishy taste.
Great tips to remove all blood line and dark part of the fish. A bit of effort but for a good cause. Yum!

I reckon smoking is the way to go soaked in a brine chilli solution then dried and smoked awesome. Every time I go camping with the boys I take my smoker
