Salmon
Went out after lunch on the slack tide to see if I could find a salmon. Took a bit of finding but it was worth it.
There's nothing . . . absolutely nothing . . . half so much worth doing as simply messing around in boats.

Looks like it. There was only small ones in there. The big ones were 150 metres east of the rocks. They were so big the busted the hooks till I upgraded. I caught three, then the dolphins came in and had a go at the school and pushed them into the surf. I had trouble getting in close enough without ended up in the surf. Managed one more and gave it a miss. All 55-60cm fish. Put up a good fight. The one I measured was 58cm. All around that

I think the dolphins are the culprit. They drove them into ankle deep water when I saw them.

Brine is cold water about as salty as seawater plus a teaspoon of brown sugar per litre. Completely cover the fillets and leave in fridge overnight.
Drain them the next day smear them with olive oil, then put in the smoker. I have a large smoker with a separate fire box. I use heat beads and charcoal to get a small fire going. Once the smoke chamber reaches 100c I place the fillets on the rack. Then I ad a few smoking chips (from Woolworths ) The fillets stay in there for around 5 hrs. I keep adding a few more smoking chips and keep an eye on the temp. Once done i cool them pack in vacuum packs and freeze. I just break of a piece when needed and add to salad.
