It is interesting that Australian Salmon get a universal thumbs down! I have eaten smoked salmon and they were quite OK done that way - and in fish cakes. Sad that such a good looking and good to catch fish does so poorly on the table!

I'd honestly eat a Blue shark after drying it out rather than a Snapper of any size
Yeah snapper isn’t the best but I still eat them.

Caught them, didn't have time to cook and eat fresh, so I put them in the freezer. Defrosted and cooked few days later. Was horrible...

Gotta eat them fresh, or they're bait/burley, or release.
I liked the Salmon I had fresh. Snook is good fresh too.

The only time I could eat salmon was when it was caught, bled, gutted, all in the same day. Also cut the dark flesh and only the white flesh cooked. Was okay.

Definitely horrible to eat when it's not fresh, frozen-defrosted is the worst possible.

Snapper is pretty good mate, I cant imagine why you don't like them.

I agree the big ones are **** but a 2-3kg model is excellent eating.

Wrasse are very popular with chinese and very popular in WA, a prized catch in WA.
They steam them with the flesh being so soft baked or pan fried fillets they loose all the moisture just fall to pieces.

I tried them steamed and it was pretty good.

Salmon keeps in the fridge for a few days if you bled and gutted on the day when caught. The smaller ones up to 25cm are actually the better eating, they get their unique unpleasant taste as they get bigger.

I won't eat Basa though. Good thing you can't catch them here.
