Fish cake and peanut sauce

Fish/prawn, tapioca and plain flour (1 plain : 2 tapioca ratio), minced garlic, salt, pepper, chooped spring onion, and chopped lime leaves / coriander leaves if you want.
Wrap in dumpling skin or just turn to balls. And fry!

Sauce is optional. Fry peanuts, shallots and garlic, red chilli if you want. Blitz with some water, salt and pepper, sugar. Cook on a sauce pot with more water, boil til its reduced to the desired consistency.

Or just use sweet chilli sauce from the bottle.

Chopped cucumber for garnish and add freshness. Squirt lemon/lime.

For Good Friday I prepared a dish I love and cook on special occasions. Octupus in a camp oven, Dalmatian style. Seasoned octupus, potatoes, carrot and other vegies which are cooked under the bell for an hour. The end result is divine!

I might try
Firstly I put the octopus (around 2kg) in a pot and turn the stove on low heat for about 20 minutes. This process extracts all the water from the octopus, theoretically the octopus is already cooked. I then transfer the octopus in the camp oven and season it well, also adding potatoes, carrot, onion, garlic and lots of olive oil. I close the camp oven and cover it with coals as per the photo. It's ready around 45-60 minutes later. Really simple to make mate, give it a crack its delicious. :tu:
