coral trout is one of the best eating fish i used to live in queensland and it was as cheap as any other fish and they where as easy to catch as baby snappers in february you should realy try it

Caught a Coral trout in Indonesia was amazing.

Okay nevermind, i think I'll stick to recreational fishing and cooking :rofl:

Here's another one, semolina crumbed salt pepper calamari, rocket salad and homemade tartare.

Semolina gives more crisp and less oily than the traditional beer batter, easier and quicker to prep too. Just roll the cut squid pieces in a bowl of semolina crumbs and fry.

The bitterness of rocket , sweetness & sourness from the cherry tomatoes and tangy lemon dressing give the balance in the mouth after fatty crunchy calamari + tartare. :banana:

Goes well with first pressed beer :cheers:

Toss the fried calamari in salt and pepper, a slight dust of szechuan pepper or cayenne pepper or smoked paprika can make a big difference too!
Lemon dressing is just extra virgin olive oil and some lemon juice, add a bit of sugar if the lemon is too sour for your taste.

yeah there's heaps of the good eating size around atm, just dont have the time to get out and chase them.
im waiting for the biggies to arrive to have another crack at the PBs
but cant beat the smaller models for eating..
