Underrated species to eat

Kind of the opposite of the other thread - what's something you often see used as bait or thrown away as trash that is actually great to eat?

The first one that comes to mind for me is slimy mackerel.

It's a stronger tasting fish - like kingfish - but if you're into that sort of thing they are great. I don't like the dark meat but that's easy enough to peel away when it's cooked. Keep it simple with just some lemon juice to cut through the oiliness and some salt, they come up a treat.

Just saw this after posting in the other one.

Banjo = equal to gummy eaten on the same plate at the same time. Just need to get a big one to make it worthwhile cos the fillets are small.

Redfin probably isn’t underrated but it’s a bloody good generic white fleshed meat. Easy to confuse for a saltwater species on the plate.

Leatherjacket are annoying when the little ones are swarming your baits, but good sized ones are welcome to go in my catch bag. Easily skinned and gutted, then straight into a pan with butter goes well.

I’m with Tim hard to go past leatherjacket and another one some people say are trash is grass whiting they taste sweeter then kingeorge whiting and I also love to eat them

These are better than any overrated snapper I have ever tasted .

Personally think Elephant sharks aren’t bad at all but I know a lot of blokes who wouldn’t feed the things to their dog

There are a lot worse fish to eat than Gurnard fillets! I also very much agree with Leatherjackets being good to eat.

I can't catch decent fish so I'm an expert on this topic.

I'm a massive fan of couta (not the small boney ones). Also like gurnard, leather jacket, goatfish, banjo, tevally and mullet.
The areas I fish (bottom end of WP) are full of these which is fine by me

Any fishing book will mention how good leatherjacket is to eat, but so many people overlook it. Glad to see others on here enjoy it. It's one of my favourite fish to eat.

I once ate a carp out of the Upper Coliban and discovered it wasn't anywhere near as bad as I expected it to be. Not the best texture but tastes like a regular fish otherwise imo.
