Used to get them all the time both for eating and for soaking at stockyard for gummies.

Nail head to upright wooden post that isn't going to move about head height. I used to use my pergola at home. Have a very sharp knife and cut the skin right around the neck. Grab pliers and pull the skin downwards. Be very firm and it should come off in one piece. Then take down.
Fillet as you would a normal fish. Fillets are long so cut them into 6inch pieces.

Best smoked. Leave in brine for 24hrs. Smoke using stronger flavored wood chips, redgum or blackwood.

Tasted similiar to salted Pork

Definitely an acquired taste.

Then again I eat carp ;)

I have an uncle that dries it as you would prosciutto, not too bad.

I love "grilled unagi" (eel) served at Japanese restaurnts. Give it a try first and if u like it, buy the sauce and cook it yourself. :thumbsup:
