Another Salmon recipe

Gday All
Last summer we caught a few big salmon & decided to try something new
The only problem with this is you lose 30% of meat
Great around a camp site in hot weather as a nibbly

1: fillet salmon.
2: aggresive trimming of all dark meat.
3: slice strips finely.
4: lay on a plate crack pepper over with a couple of whole peppercorns as well, aslo a bit of cracked salt.
5: submerge with squeezed FRESH lemon juice
6: put in fridge for 2 hrs ( just starting to turn white )
7: pass around for all to enjoy
8: drink a nice cold Pilsner
9: get pats ont the back

Warning: you may require padding on your back to soften all the pats..

I have fed this to people who believe eating traditionally uncooked fish to be disgusting, & after eating this love it.
I misled them on how the fish was prepared, but told them after they ate it.
Has changed a few people's ideas.

Try this - Asian style:

fillet the salmon and remove the red flesh (or any other kinds of fish, spanish mack is best) slice thinly
finely chop garlic, onion and ginger
pinch of salt or as much as you want
ground black pepper
optional hot chilly pepper
vinegar or lemon or both

mix all ingredients and let it sit for about 10 minutes.

Enjoy

looks like something I'll have to try -

and put the waste salmon meat through a meat grinder with the frames and add to your burley then there no waste
