With the smaller one, fill the cavity with chopped onion,parsley or herbs of your choice, a knob of butter, basically anything you like,slice into each side several times same way as the rib line and stuff in lemon wedges, salt in and out, wrap in foil and bake.
Or steam if you have suitable gear, this will then give you a cupla alternatives to try,
You would then know how to do your next big bream from Bemm.

And as far as the menu, exactly as Blue says. Only addition I'd add is a bit of celery (can be the leaves). I find the celery helps take the really strong fishy taste away, but still keeps the flavour of the Snapper.
The larger one, definitely fillet as Blue said. Be mindful, one that size highly likely would have those calcium bone blobs on the frame, fillet around carefully so as not to mash the fillet and helps keep as much flesh as possible.
Try that Tandaco mix, really nice. Just wet the fillet and roll in the mix. Deep or pan fry. If you cut some of the fillet into chucky pieces, larger than nuggets, it works well. The right amount of coating for the size of the piece AND being smaller, the little bit of oil that coats it after cooking, seems to help keep the pieces moister better. That size of Snap can start being more dry when cooked.
