yep, on the BBQ the smaller fish tasted a lot better than the big one, even after they were all prepared the same way.
100%. The big ones go dry. Ideal eating size imo is around 40cm..
We normally fillet ours now, have zero problems with the bigger ones tbh, less trouble than the smaller ones, magic when fresh...

Yeah the larger ones I always fillet too mate, just makes it easier.

Does filleting them do something different to the flesh on the bigger fish?
I've never done it that way, mainly because I havent caught many big ones lol...

On the bbq few people mentioned the smaller fish tasted much better.

In my opinion anything cooked whole is always going to taste better, in saying that it ain't exactly easy cooking a whole 5kg snapper on a webber. The outside burns and the inside doesn't cook through hence why most will fillet the larger ones.

I personally find the juiciest snapper to be in the 700gm to 1kg range cooked whole on charcoal. My mouth is salivating as we speak :ch:

The larger ones that we fillet we cook on the pan fish and chips style or I get my mum to make a nice stew with spring onions and polenta.

p.s I don't normally have the problem of filleting them as i don't normally catch them big :gj:

I have noticed the smaller ones def taste better and are not Nywhere as dry as the larger ones. Could be how its cooked. But then again I'm.not a big fish eater so I dont pay too much attention to how its tasting or being cooked.

Battered and pan fried the last few, been sensational. Zero probs with drying out, even my youngest daughter has been wolfing them down..
