It's Olive picking season.
I have a Kalamata Olive tree and am in the process of picking and processing the Olives into Table Olives.
Some I picked earlier
My last years helpers , , , , My Daughter and the Boyfriend in-law are coming Saturday to help pick the rest.
And this little guy cleans up any that we have left behind.
As far as the Olives, I do half the harvest in rock salt, by putting the Olives in a small barrel with handfuls of Rock Salt. The Barrel gets rolled to mix the salt amongst the Olives, this is done twice a day. The Olives stay in the barrel repeatedly being rolled for 5-7 days and done till "depending on personal taste". I like them a little bit bitter, gives them a bit more "bite".
The other half of the harvest is placed in jars and filled with brine (salted water). The amount of salt dissolved in the water is enough to make three eggs float, with the "above water" part of the egg being about the size of a 10 cent piece. I use three eggs to get a good gauge, just in case there is one rotten egg that floats oddly , , , , a bit like me
