If you were having a fish dish , , , , and were having a Salad and had wished that that Salad had Olives well is this the thread for you
It's Olive picking season.
I have a Kalamata Olive tree and am in the process of picking and processing the Olives into Table Olives.
Some I picked earlier
My last years helpers , , , , My Daughter and the Boyfriend in-law are coming Saturday to help pick the rest.
And this little guy cleans up any that we have left behind.
As far as the Olives, I do half the harvest in rock salt, by putting the Olives in a small barrel with handfuls of Rock Salt. The Barrel gets rolled to mix the salt amongst the Olives, this is done twice a day. The Olives stay in the barrel repeatedly being rolled for 5-7 days and done till "depending on personal taste". I like them a little bit bitter, gives them a bit more "bite".
The other half of the harvest is placed in jars and filled with brine (salted water). The amount of salt dissolved in the water is enough to make three eggs float, with the "above water" part of the egg being about the size of a 10 cent piece. I use three eggs to get a good gauge, just in case there is one rotten egg that floats oddly , , , , a bit like me . Then once the olives are covered by the brine, a layer of vegetable oil is poured in, to seal the top of the brine, this stops the olives/brine going off. Some people also put a little vinegar in (I have on occasion, they taste nice that way too, but the more vinegar, the softer the olive goes). Then the Jar lids go on. These Brined Olives are ready to have in about a months time.

Good to see something different on this forum,my parent's make their own as well and also make olive oil every year. I might put a photo up of his orchard ,as they have 20 plus olive tree's in just a normal suburban property.

Great post mate!
When it comes to olives it reminds me of when the missus and I have a pizza. I love them, but she hates them so we always get olives only on half the pizza!
Great to hear the family coming over to help with the harvest as well.
I bet they are very tasty!!!

I love olives, but I'm the only one in the family (mate says it's because I'm a Brunswick boy)
A lot of trees have been planted around here in recent years
And yes, people come home from work and find their trees bare
I buy already processed olives, can you eat them straight off the tree????

Very nice. Would love to have an olive tree, but I have a small backyard. Perhaps there's a dwarf olive tree I grow in a big pot.

I thought Italion was the bigger population in Brunswick,as my parent's live there, how i ended living in Werribee i don't remember. Nice quarter acre blocks on Blyth st.

Just love black & green olives, especially in a salad.. A friend of mine who lives at American River on Kangaroo Island always picked & preserved olives from the trees that grow wild over there..
